In preparing to write the advanced barista course for La Spaziale I have spent a fair amount of time reading up on taste/flavour/aroma and all that stuff
There seem to be so many different opinions that its frightening. One interesting point I read was about the size of the mouthful you take and the perceived acidty (its to do with saliva and its buffering effects on acids). Whilst cupping yesterday I tried little sips and bigger slurps and there did seem to be a difference.
That said it could be merely psychosomatic….
