I’ve started e-mailing Marino Petracco of Illy caffe about a few things – namely trying to develop my understanding of crema and the relevant foaming agents and surfactants and the role oil plays.

I’m not sure what use the end of all this will be – except that I can write a better advanced course I suppose.

I really can’t stand Fairtrade ™ coffee – another mouthful will leave me ready to kill – the public in the uk really are so pleased to have a little guilt lifted that they leave their taste buds at home and just go and buy it cos Oxfam says so.
